One-Hour Cinnamon Rolls
Makes 2 dozen cinnamon rolls
Dough
3 1/2 cup warm water
3/4 cup sugar
1/2 cup oil
6 Tablespoon yeast (4 1/2 Saf-Instant)
1 Tablespoon salt
3 eggs
10 1/2 cup flour
Cinnamon-Sugar Mixture
1/2 cup melted butter
1cup sugar
1 Tablespoon cinnamon
Mix warm water, sugar, oil and yeast and let sit for 15 minutes. Add remaining ingredients and mix for 10 minutes, then let sit for 10 minutes. Oil counter and dump out dough. Divide dough in half. Press half of dough out into rectangle. Spread with ¼ cup melted butter and then with cinnamon-sugar mixture. Roll up tight, but not too tight. Divide into 12 rolls and place on greased 9x13. Repeat with other half of dough. Let rise until they have doubled. Bake for 20 minutes or until done at 400.
Whipped Cream Cheese Frosting
16 oz cream cheese, room temperature
1 1/2 cup powdered sugar
1 teaspoon vanilla
1 cup heavy cream, cold
Beat cream cheese, powdered sugar and vanilla until smooth and fluffy. In a separate bowl, beat the heavy cream to nearly stiff peaks, then add the whipped cream into the cream cheese mixture and quickly (and briefly) beat to combine. Do not over beat.
Evenly spread the whipped cream cheese frosting onto your 2 pans of hot cinnamon rolls and enjoy!
